Preheat oven to 170-180 C. Cream butter and sugar until creamy. Add the eggs one at a time. Allow mixture to become aerated and fluffy. Incorporate vanilla. Fold in bananas and feijoa. Sift all the dry ingredients together and fold into wet mixture, don’t overwork the mixture. Prepare 20 cm round cake tin with baking paper. Pour mixture in and smooth out. Bake for 35 minutes check with skewer it may need more time. Once the cake is cooled, level the top of the cake cover with icing of choice or standard icing of 40- 50 g butter mixed with 2-3 cups of icing sugar a dash of vanilla and add milk according to consistency required. If preferred a dash of lemon juice can be added. Beat until well combined and cover cake |
